Ingredients

Preparation

1 cup sweet potato from approximately 1/2 sweet potato

1 banana

1 cup low-fat milk

1/4 cup orange juice

Handful of ice cubes

Optional:

Pinch of cinnamon

1 tablespoon honey or maple syrup

  1. Scrub sweet potato clean under running water. Pierce the sweet potato skin with a fork 5 to 6 times. Place the sweet potato on a microwave-safe plate and microwave for 5-10 minutes, or until a knife cuts through easily. Allow to cool, then peel. Measure one cup of sweet potato for recipe. Refrigerate remaining sweet potato for use later.

  2. Place sweet potato and all other ingredients in the blender. Blend until smooth. Add ice as needed to get to desired consistency.

  3. Split between 2 cups and serve.
